The royal kitchens were a treasure trove of recipes. The Maharajas loved good food and food in the royal rasois was a form of celebration. There was no place for the ordinary. Kitchens thrived on new discovery, experimentation with local and global food, exotic preparations and grand meals. Each royal family closely guarded their culinary recipes and their khansamas like treasures. Chief among these were the 21 Gun Salute States – the princely states that ranked the highest in terms of honour.
