Z'Tejas Inc.
Cajun meets Tex-Mex meets Pacific meets a whole lot of mouths at Z'Tejas. The company operates about 10 Z'Tejas Grill locations in about a half dozen Western states that specialize in Southwestern fusion cuisine, including such items as Voodoo Tuna, margaritas, Crispy Catfish Beignets, margaritas, Miso Salmon, and, yes, margaritas. Serial restaurateur Paul Fleming (who started P. F. Chang's China Bistro), Larry Foles, and Guy Villavaso, fraternity brothers at Louisiana State University, opened the first Z'Tejas in Austin, Texas, in 1989. Villavaso and Foles continue to own the company.
