Each themed eatery is an over-the-top recreation of a post-war Italian-American restaurant decked out with a hodgepodge of memorabilia. Geared for larger parties of people and event dining, the menu features Southern Italian-American cuisine served family-style to encourage sharing and conversation. Most locations of the casual-dining chain offer a lunch menu (smaller portions for single diners) in addition to its popular dinner options. BUCA was acquired by Planet Hollywood in 2008.

In 1980, inspired after a trip to the US, a Frenchman named Christian Picart opened an American-style family steakhouse with a Wild West theme south of Paris. Buffalo Grill now has more than 300 restaurants across Europe that serve affordable steaks along with such dishes as bison steaks, chicken wings, and ostrich meat. (Since it's France, there's still a cheese plate.) The restaurants are designed to resemble saloons of the American Old West, complete with oil lamps, totem poles, and wait staff dressed like cowboys. The family-friendly atmosphere even offers a game room for children. Colyzeo, a joint venture between investment firm Eurazeo and US-based Colony Capital took Buffalo Grill private in 2007.

Hot sauce fuels the flight of this restaurateur. Buffalo Wild Wings (BWW) operates a chain of more than 650 Buffalo Wild Wings Grill & Bar quick-casual dining spots in about 40 states that specialize in serving Buffalo-style chicken wings. The eateries, found mostly in Midwestern and Southeastern states, offer more than a dozen dipping sauces to go with the spicy wings, as well as a complement of other items such as chicken tenders and legs. BWW's menu also features appetizers, burgers, tacos, salads, and desserts, along with beer, wine, and other beverages. The company owns and operates about 230 of the restaurants, while the rest are operated by franchisees.

This company is part of the Tex-Mex restaurant stampede. Buffalo's Franchise Concepts operates and franchises about 30 Buffalo's Southwest Cafe casual dining locations in Georgia and about 10 other states. The restaurants offer a typical southwestern style menu, including burritos, fajitas, and quesadillas, along with burgers, steaks, and Buffalo-style chicken wings. Outside the US, the chain has locations in Kuwait, Puerto Rico, and Saudi Arabia. David Hyde and Ralph Perrella started Buffalo's in 1985. Former franchisees Drew Alexander and Shelli Lang acquired the company in 2007.

All-you-can-eat is the only way to dine with this company. Buffet Partners operates about 50 cafeteria-style buffet restaurants under the names Furr's Family Dining and Furr's Fresh Buffett. The family eateries, found in Texas and half a dozen surrounding states, serve standard American fare for lunch and dinner, including chicken-fried steak, liver and onions, roast beef, and seafood. The Furr's dining chain was started in 1946 by brothers Roy and Key Furr. Buffet Partners was formed by private equity group Cardinal Investment to purchase the chain in 2003.
