Jelly Belly Candy Company beginnings are traced back to a family named Goelitz. When two young brothers emigrated from Germany to make their mark in America, they set the family on its candymaking course. In 1869, just two years after arriving in America, Gustav Goelitz bought an ice cream and candy store in Belleville, Ill., and his brother, Albert was sent out in a horse drawn wagon to sell their sweets to nearby communities. Then the second generation of the family jumped on the band wagon of candy innovations by making a new type of candy, then called "buttercream" candies, including Candy Corn, a sweet we've made since about 1900 (and still use the same recipe). These candies carried the family through the Great Depression and two world wars. Today, the great-grandsons of Gustav Goelitz, the fourth generation, are still carrying on the tradition of making candy.

J.W. Judson bought part ownership of the company and constructed a new factory on a part of the old Judson Ranch, which is now South Flores Street. In the 30's Judson added a starch department and started manufacturing candies with jelly and creme centers such as fruit drops, orange slices, jelly beans, and easter eggs. Mr. Judson started experimenting, trying to make a more tart jelly bean, and ended up inventing the "sour", one of the company's most popular items. J.W. Judson's sons purchased the company from Mr. Jenner and in 1945 changed the name to Judson Candies. Mr. Judson's son George Jr. then invented another popular item, the chewy praline. Pralines used to be prepared by scooping up the batter with an ice cream scooper, however that process was mechanized using an electronic depositor developed by Southwest Research Institute.

Few products have achieved the iconic status of PEEPS®, the yellow, chick-shaped marshmallow confection beloved by children and adults alike. But, as popular as PEEPS® has become, it is only one of the many delicious products produced by Just Born, an 87-year-old, family-owned confectionery company based in Bethlehem, Pennsylvania. The Just Born candy tradition actually began in 1910 when Sam Born emigrated to the U.S. from Russia. A candy maker by trade, Born used innovative technology to produce chocolate sprinkles, known as Jimmies, and the hard chocolate coating for ice cream bars. In 1916, Born invented a machine that mechanically inserted sticks into lollipops.

Contrary to the old adage (often erroneously attributed to P.T. Barnum, but that's another story), 480 suckers are born every minute. Four hundred and eighty is the number of lollipops that Kendon Candies makes every hour. (Actually, the company cites the figure 15,000 a day; your intrepid writer has done the math based on an eight-hour day.) At any rate, Kendon is one of the country's top manufacturers of hard-candy lollipops. Its rainbow-colored pinwheel, round-up, seasonal, and specialty-shaped sweets on a stick are sold at amusement parks, zoos, restaurants, candy stores, and gift shops. Kendon Candies was founded in the 1950s by Tom Kennedy, who still owns and operates the company.
